Nutritional Biochemistry is intended for undergraduate college students at junior and senior levels and interested in nutrition. The text provides a solid biochemical approach to nutition for those embarking on a career in experimental nutrition, dietics, medicine, or nursing. A global approach is taken, and the commentary blends information from enzymology, metabolism, human and animal nutrition, and medicine to form a coherent whole. The text details the nutrients of the diet and the biochemistry of their digestion, absorption, transport and catabolism to cellular components of structure, storage, and excretion.
